Chinese Rice
Servings: 7-8
Preparation time: 40 minutes
Ingredients:
2 onions (chopped)
3 tomatoes (chopped)
1 flower of cabbage (shredded)
2 potatoes (cut into small pieces)
1 capsicum (chopped)
1 cup peas
400 gram boneless chicken (boiled and shredded)
5 green chilli (chopped)
12 tablespoon soy sauce
4 tablespoon vinegar
2 tablespoon black pepper
2 tablespoon all spice mix (garam masala)
1 cup oil
Salt to taste
750 gram rice
Directions:
1. First soak rice in lukewarm water for 30 minutes.
2. To a pan add oil. To this add chopped onions and let them sauté for 1 minute. Then add tomatoes and stir for 2 minutes.
3. Now add shredded cabbage, potatoes, capsicum and peas. Stir for 1 minute and add 1+ 1/2 cup water and let them cook with lid on.
4. When water is almost dry, add boiled shredded chicken, soy sauce, vinegar, black pepper, half of chopped green chilli and salt to taste. Let it cook without lid, on medium heat until all liquids dry.
5. In a separate pot pour 1 litre water. To that add 1 tablespoon oil and 1 tablespoon salt. When water starts boiling add rice to that. When rice are just a little bit firm (just about to be boiled completely) take them off heat and strain immediately.
6. In a small bowl, mix remaining chopped green chilli with the all spice mix (garam masala).
7. Put a pot on low heat. To this first make a layer of half of vegetable mix and on it layer down half of rice. To that sprinkle all spice (garam masala) and chilli mix. Repeat same by adding remaining veg. mix, rice and spice.
8. If rice are a little bit raw then cover pot with a wet napkin and put the lid on and leave for 10 minutes on low flame. If rice are fully boiled, leave on low flame using dry napkin for 10 minutes.
9. After that mix everything together, dish them out and enjoy.
