Coffee Loaf Cake
👉 For batter
3 cup all purpose flour
2 cup castor sugar (powder form)
1/2 cup oil
5 tablespoon cocoa powder
2 eggs
1/3 cup milk
3 tablespoon instant coffee
2 tablespoon baking powder
👉 For baking
Bread pan (11” x 6”)
Butter paper
2 tablespoon oil to grease pan
Directions:
1. Grease the bread pan with oil. Now put butter paper in bread pan in such a way that paper has flaps sticking out of pan so its easy to take loaf out. Then grease butter paper with oil.
2. Now in a bowl sift your flour, cocoa powder and baking powder and mix them well with help of a spoon. Your dry ingredients are ready.
3. Pour 1/3 cup of slightly warm milk in a cup and to that add coffee and mix it.
4. In a separate bowl crack eggs and beat by using a whisk. When it gets a little fluffy add sugar and mix it. Then add oil and again mix everything. In the end add coffee flavoured milk and give everything a good mix.
5. To this add dry ingredients and fold in by using a spatula. Mix together leaving no lumps. But don’t over mix it or the bread will not be fluffy.
6. Pour this mixture into bread pan and bake at 180°c for about 1 hour.
7. Keep checking after 45 minutes by putting a toothpick in centre of batter. If it comes out clean from the centre then cake is done. If pick has liquid batter on it then it will take some time.
8. When done, take pan out and then take bread out of pan and let it cool down.
9. Cut into slices and enjoy with your tea.
Precaution: Your cake may take 45 minutes to bake or it may take above 1 hour depending on temperature and type of oven. Never take out bread/ cake undercooked. Only take them out when pick comes out clean from centre of pan because centre takes more time to bake (puff up) than sides.
