Egg Muffins 

(Grab and go breakfast)


Servings: 14-15 muffins
Time: 25 minutes 

Ingredients: 
8 eggs
1 medium capsicum 
1 small tomato 
2 tablespoon mayonnaise 
4 tablespoon milk
1 tablespoon red chilli 
Salt to taste 
1/2 cup grated cheese (optional)
Silicone cupcake moulds 

Directions:
1. Chop down capsicum and tomato.
2. In a bowl crack eggs and add all the ingredients along with chopped veggies and cheese and whisk everything.
3. Line silicone moulds in baking tray and pour the mixture filling 3/4 of mould.
4. Set oven at 180°c and let muffins bake for 15 minutes.
5. After that take them out and let them cool down. Then put them in an airtight container and put in fridge.
6. Give them 30 seconds in microwave oven before eating.
